This Could Change Your Opinion On Salmon

Salmon, an oddly spelled word that is pronounced differently than it's spelled.

What gives?  I’m not sure to be honest, I do know someone named Salmon appears in the bible, though, so it’s clear that this ancient word has some serious staying power.

And salmon the fish on the other hand, definitely has some staying power.

I’ve written about salmon frequently and that’s because this fish is rich in one of the healthiest fats known to man: Omega 3 fatty acids.

Surprisingly, I’m not here to talk about Omega 3 fatty acids, instead I’m here to talk about an antioxidant called astaxanthin.

Astaxanthin is a carotenoid, which are “yellow, orange, and red organic pigments that are produced by plants and algae, as well as several bacteria, and fungi. Carotenoids give the characteristic color to pumpkins, carrots, corn, tomatoes, canaries, flamingos, salmon, lobster, shrimp, and daffodils”.

And based on the fact that salmon eat large amounts of algae, they’re what help to give salmon their deep reddish/orange color. Other animals rich in astaxanthin are krill and lobster.

But what’s so great about this pigment?

Oxidative stress has a way of shaping the development of your brain.
